Because Canelo wouldn't want to fight someone that good. He's already fought someone that size in Kovalev. Why wouldn't he want to fight him? The fight would make huge $$$.

Very interesting article on the Kovalev/Canelo fight, and a possible Beterbiev/Canelo fight:

Canelo's management handpicked Kovalev as he was the weakest of the champions at light heavyweight but also the biggest name. I don't think a fight against Beterbiev or Bivol would generate the same revenue as those fighters aren't as well known by the general public, and unlike Kovalev they aren't past their use by date. Canelo is a decorated and talented fighter but despite his win over Kovalev he isn't a light heavyweight, and I don't think he would stand a chance against either of the other champions at that weight. I doubt he will stay at 175lbs but if he does then I would say his next opponent would more likely be Gilberto "Zurdo" Ramirez, another undefeated Mexican who has moved up in weight and is next on the WBO rankings.

Nulla, I think you're making too much sense:

I think he is already the new mayweather of opponent selection.
Canelo v Israel in Dubai in a crossover mega fight worth $200m....
In fairness he can pick and choose now as he is the money maker

As expected Canelo has officially vacated the WBO light heavyweight title, only 6 weeks after taking it from Kovalev:
